Today people
require higher standards in almost every single sphere of activity since they
feel they are worth better services and goods. And most things depend on the
opinion and statements of critics to have the utmost final decision. And
Michelin Red Guides is the essentially vital tool to evaluate and appraise
restaurants by fixed and stable criteria accepted by people.
Michelin
Red Guides is nothing but the most competent and authoritative rating of
restaurants made annually. Yet, in 1900, when the guide was initiated, it has
nothing to do with restaurants. Andre and Edward Michelin, the founders of the world-known
company-manufacturer of automobile tires, got anxious on how to attract more
clients. And they came with the brilliant idea to distribute free-of-charge reference
books among the car owners which told on where hotels, petroleum stations and
auto parks were located. And no restaurant was mentioned there in those books and
only in 1920 the catering institutions were included in the book. Though, the book
was not the rating that time but the mere list of cafes and restaurants which
are located in France.
And the restaurants with high prices were marked with stars. Since 1926 when
the Micheline Red guide got the fame and popularity and the prestigious book
was put to sale, the approach to mark restaurants changed a little. The star
was put opposite the institution with the perfect kitchen proved by many
customers. In 30s the classification of restaurants reached three stars and in
general it came to the way we know it now.
These three
stars evaluate the quality of cuisine of particular kitchen of
particular restaurant.
It is quite simple to evaluate the quality of cuisine since too many
components
should be considered. When considering the matter at a simple view, one
star is
provided for the very good kitchen, two stars are given for ideal
kitchen which
is perfect to cause reproaches, and the third star is provided to the
kitchen
where the chief is the real genius of culinary art. These Michelin stars
matter
for any restaurateurs and chefs as well as Oscar Award brings fame and
reputation
to show-biz persons. The stars give the status, fame and theopportunity
that the income will only increase since the star is attached to your
place. Here is a nuance when the Oscar Award is given for
ever to the nominate while the Michelin stars can be given and taken
back, if the
severe judges consider that the restaurant decreased the standard of
quality.
It is curious
but the precise criteria are not known to get those stars. The Michelin Red
Guide publishers keep it confidential and it is reasonable. When the criteria are
known to everyone, the restaurant owners will specially accentuate the weaker
points to get the star which is not good and which allows decreasing the
attention to other aspects of restaurant business.
Though,
some information is known. Michelin does not favor for restaurants without the corporate
chef and the best cuisine. However, fourteen criteria are known to make the
reputation for the restaurant worthy a star.
The
personalities who judge the restaurants are not known to wide public, either.
These judges never inform anybody on the visit; they come incognito in the
restaurant as ordinary visitors. After they put orders and taste dishes, they
reserve the right to reveal themselves or not. It is up to them. If the cuisines
are bad in quality, the Michelin judge just pays or it and leaves the
restaurant. When wine and dishes are worthy tasting, the visitor asks to get
introduced to office facilities, and organize the brief talk to the chef and
the owner. After the owners wait for the new edition of the Michelin Red Guide.
There is no
official information that judges of the most prestigious restaurant rating favor
for the French cuisine though the fact that the most restaurants marked by the
Guide and restaurants with three stars are located in France is too suspicious.
The top position among three-star restaurants for the year 2009 by the Michelin
Red Guide is kept by France
with 26 restaurants in total. The second place goes to Japan with 9 marked restaurants and the third
place is shared by Germany
and Spain.
Whatever people
discuss about preferences and tastes of
judges to acquire stars of prestige and reputation, the restaurants in many
countries are not marked at all. And Russia is one of countries where no
single restaurant is marked with a singe star, though it does not prove at all
that Russian cuisine is not worth tasting and enjoying. And this refers to
cuisine of many countries that can boast with wholesome and tasty food , but
that are not to rentable to keep and pay for the chef to be number one in this
sphere.
